Coffee with Baileys? YES, please!
My mom and I are coffee people, and just to stir things up every now and then, we inject a little inebriant into our cup of joe. Our alcohol of choice: Baileys Irish Cream. It really goes well with coffee, and it somehow makes the usual more special. At times, when there's stock in S&R, we use the mint-flavored Baileys, but oftentimes, it's just the regular one. Either is fine.
When I heard that Irene, the talent behind Indulgence by Irene and its popular Queso de Bola Cheesecake, was concocting new flavors---Earl Grey, Corn, Orange Bourbon, and Coffee with Baileys---my ears suddenly perked up at the mention of the latter. Oooh! A favorite combination of mine in Irene's cheesecake creation? This should be good.
And it indeed was! Coffee flavor that was defined in every seductive bite, and a whisper of that good irish cream liquor sneaking up on you sporadically, I can't help but add it to my list of favorite cheesecake flavors along with QDB, Ube, and Calamansi. I love pairing it with coffee, and I enjoyed my first slice with a cup in one hand and a book in the other. And apparently, I wasn't the only one who fell in love with it...
While I was shooting the cheesecake, trying to catch the morning light before the harsh noon comes, my baby was watching me---err, the cake---intently.
As I was finishing up, she asked, "Mommy, can I have a taste? Are you done taking a picture of it?" hope etched across her face.
"Of course," I replied, quite forgetting that it had some alcohol content.
"Mommy, it's so yummy!" my baby cried out as she put another forkful into her mouth. It was then that I remembered-slash-realized it had liquor. When I told her that's her last bite, she got sad. I told her it has wine (the only definition of alcohol she's familiar with), then she asked if she could eat it when she's an adult already, haha! (She knows wine is only for adults) I said yes, sure.
That wasn't the end of the story, though. That night, she went inside our room, holding the red box of cheesecake.
"Mommy, can I eat this?" she said with a pleading look in her eyes.
"No, sweetheart, it can't be for you 'coz it has wine, remember?" I answered, my resolve starting to crumble as I looked at her sad face. But she was one determined cheesecake monster.
"Pretty please, Mommy! Small lang, small lang, pretty please??"
Now who can resist that sweet request paired with batting eyelashes and cute smile? I checked with Irene to make sure that the alcohol content is just at a minimal level, and finally gave in to my daughter's plea. Needless to say, she happily gobbled up the slice. She ate another one the following morning too, and even negotiated for a bigger piece. That good!
Oh well, my share got smaller, I better order another one soon. I'd also like to try the Orange Bourbon next. What can I say, I love liquor combinations! The Earl Grey sounds awesome as well.
