Indulgence by Irene's new cheesecake baby...
I've featured every cheesecake flavor made by Irene, a very talented home baker who's quickly making a name for herself in Manila's dessert scene. Indeed, Indulgence by Irene has come a long way from baking these goods for friends and for personal consumption, to making them available for ordering and in bazaars so that more people can get a taste of why it is hailed as one of Manila's best cheesecakes.
Among her four available variants---Queso de Bola, Chocnut, Tablea, and Ube---I was enamored with the QDB and Ube, both rich, utterly creamy, and resonate with a robust amount of flavor that they represent. These cheesecakes are indeed worthy of the term indulgence.
The fact that I have more of a savory/salty/sour tooth than of a sweet one, I was giddy with excitement when I learned that Irene has a new flavor: Calamansi Cheesecake. Images of pucker-your-lips goodness floated through my mind, and when I finally tried it, a smile of blissful satisfaction was left in the wake of agonizing anticipation.
The usual creaminess we've all come to love is still ever present, signaling the tedious process of maintaining the right amount of mixing without overdoing. There's a hint of tangy taste which achieves a balance when combined with the sweet, buttery crust of graham. And the off-white hue of the cake is peppered with bits of calamansi rind. There's no cloying taste whatsoever, so it's pretty easy to fall in love with this one. Now I have three flavors to alternate when the craving for cheesecake strikes.
